After selling the Newcastle Arms, Paul went to Castle College in Sheffield as chef/lecturer, teaching City & Guilds 706/1 and 706/2 craft courses. He also extended his own further education by attending Hull University to study for a Cert Ed. Paul worked with Kevin Woodford (Principal Lecturer and Head of Department) and Ian Greer (Head of Catering), and has remained friends with them ever since.
Paul's achievements at the college included grooming the students for competitive events and for running the Forte Hallam Hotel for two weeks as a project. He maintained close links with the college after he left, taking diploma students on placement, and latterly employed several on a permanent basis.
Ian is now a private consultant and Kevin has become a celebrity chef and presenter with the BBC.
